Wylam sure knew what the water wanted, and what it wanted was to be totally opaque. ‘I’m sick of being always being able to see through me’ it said. ‘I feel flat, tasteless and boring, and everyone knows what I’m going to be like generally except that people in the north think I taste different in the south’.
Wylam listened. ‘Would you like some hops?’
‘Yes please!… although not before the -‘
‘Yeh we know how to make beer, I just thought that’d probably be the main thing you’d want’
‘Right, yeah, go for it.’
‘Mike?’
‘Yeah what?’
‘Who you talking to?’
‘The water’
‘What?’
‘Oh yeh… er, joking, obviously. Just um making a voice note on my phone’
‘Alright’
Cut to however long later it takes to make beer and this bad boy was pale, hoppy, presumably double dry hopped although there’s no way to be sure without doing a tiny bit of research, and really tasty. Turns out, what the water wanted is exactly what I wanted. It’s delicious. One of the best beers I’ve ever had from one of my favourite breweries. Although, what does wanting the same thing as liquid mean? I guess I am a very high percentage of water. And so in a way, this is what the water wanted.
